- 1 tablespoon brown sugar
- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- pinch salt and pepper
- 1 kabocha squash
- Preheat oven to 350
- Cut squash into quarters and scoop out seeds.
- Use a fork to combine sugar with salt, pepper and balsamic vinegar.
- Place squash cut sides up in a roasting pan, and sprinkle evenly with sugar mixture.
- Cover pan with foil and bake for 1 hour, or until very tender.
