Balsamic Roasted Kabocha Squash




Yield: 4 servings

Prep Time: 10 minutes

Total Time: 1 hour 10 minutes




Ingredients:
  • 1 tablespoon brown sugar
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • pinch salt and pepper
  • 1 kabocha squash

Directions:
  1. Preheat oven to 350

  2. Cut squash into quarters and scoop out seeds.

  3. Use a fork to combine sugar with salt, pepper and balsamic vinegar.

  4. Place squash cut sides up in a roasting pan, and sprinkle evenly with sugar mixture.

  5. Cover pan with foil and bake for 1 hour, or until very tender.
