Ingredients:
- 1 ¾ cups all purpose flour
- 1 ¼ tsp baking powder
- ½ tsp baking soda
- 2/3 cup sugar or ½ cup agave nectar
- ½ cup butter
- 2 eggs
- 2 tblsp milk
- 1 cup mashed ripe banana
- ¼ cup nuts, chopped
Directions:
- Preheat oven to 350 degrees F.
- In a medium bowl, stir together flour, baking powder, baking soda and ¾ tsp salt and set aside.
- In a mixer bowl, beat sugar and butter together with an electric mixer till light, scraping sides of bowl often. Add eggs, one at the time, and the milk, beating till smooth after each addition.
- Add flour mixture and banana alternately to creamed mixture, beating till smooth after each addition. Fold in nuts.
- Turn batter into a lightly greased 8 x 4 x 2 loaf pan.
- Bake at 350 F for 60 – 65 minutes or till a wooden toothpick inserted near the center comes out clean.
- Cool in pan for 10 minutes. Remove from pan, cool.
