Carrot Raisin Salad

Prep Time: 20 mins
Serves: 4-5

Ingredients

  • 5-6 large carrots or a 1 lb bag of baby carrots
  • ½ cup raisins
  • ½ cup boiling water
  • 2 tblsp rice wine vinegar
  • 1 tblsp dry dill weed
  • ¼ tsp sea salt
  • 1 tblsp apple concentrate or ¼ apple chopped fine
  • ¼ cup sunflower oil or canola oil
  • 2 tblsp mayonnaise

    Directions

    Pour the boiling water over the raisins in a small heatproof bowl. Let soak for 10 mins. Wash, peel and grate the carrots. (you do not have to peel the carrots, but the dish will be sweeter and less bitter if you do). Mix up the dressing in a small bowl, stirring the dill, salt and apple into the vinegar before adding the oil. Drain the raisins, discarding the water. Stir them into the salad. Add the mayonnaise. Stir again blending all together well.  You may serve immediately though the dish is better if allowed to sit for at least 30 minutes for the flavors to mingle.
