Drunken Collard Greens

Ingredients:
- 1 bunch collard greens - rinsed, trimmed and chopped
- 1 onion, diced
- 1/2 teaspoon cayenne pepper
- 1 (14.5 ounce) can chicken broth
- 1 tsp olive oil
- 1 (12 fluid ounce) can beer
- salt and pepper to taste
- Heat a large pot over medium-high heat. Add the olive oil and onion; cook and stir until slightly browned. Add cayenne pepper.
- Add the collard greens, and pour in the chicken broth and beer. Cook over medium-low heat for 30 to 40 minutes, until collards are tender. Season with salt and pepper before serving.
