  Easy Camp Chicken

Yield: 4 servings
Prep time: 20 mins
Cook time: 1 hour

Ingredients:

  • 1 whole chicken cut up or 6 boneless chicken breasts
  • 2 tablespoons butter
  • 1 clove garlic, minced
  • salt and pepper to taste
  • 2 Russet or Red Potatoes, cut into 1-2 inch chunks
    1 large red onion, cut into wedges
  • 12 cherry tomatoes
  • 1 Red Pepper, cut into 1 inch pieces
  • 3-4 carrots cut lengthwise and then in 2 inch chunks
  • 2-3 tablespoons fresh herbs (oregano, rosemary, thyme, basil, parsley, etc.)
Directions:

  1. Preheat oven to 400 degrees.
  2. In a large baking dish, combine chicken, garlic and vegetables. Put small “pats” of butter on top of the chicken and vegetables. Salt & Pepper and add other herbs & spices.
  3. Cover with foil or lid and bake for 45 minutes until chicken is tender. Uncover and bake for another 10-15 minutes until lightly browned.


    Special Note:

    You can also make individual foil pouches with all of these ingredients inside an cook them on the grill at your campsite. Hence the name.
