Green Bean and Tomato Salad

Ingredients:
- 1 pound fresh green beans, trimmed
- ½ cup thinly sliced red onion
- 1 pint grape or cherry tomatoes
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- ¾ teaspoon salt
- ¼ teaspoon pepper
- Place beans in a saucepan and cover with water; bring to a boil and cook uncovered for 5 minutes until crisp-tender. Drain and rinse with cold water. Place in a large bowl and add tomatoes and onion.
- In a small bowl, whisk together the lemon juice, oil, salt and pepper and pour over the vegetables. Toss to coat, cover and refrigerate for at least 1 hour or overnight. Serve cold or at room temperature
