Mama's Squash Casserole

Serves: 4
Ingredients
- 1 ½ cups fresh yellow squash, sliced, steamed and mashed (save juice)
- 2 eggs beaten
- 1 small onion, chopped
- 2 cups buttered breadcrumbs (toss bread cubes with about ½ cup melted butter)
- 1 cup squash juice
- salt & pepper to taste
Steam the squash and then mash them saving the juice. Mix all of the above together except breadcrumbs and put into casserole dish. Put breadcrumbs on top and bake at 350 degrees F for about 30 minutes.
