Pear and Walnut Coleslaw

Yield: 8 servings

Prep time: 15 minutes

Total time: 20 minutes plus chilling time





Ingredients
  • 1 head cabbage, shredded
  • 1-2 large carrots, shredded
  • ½ cup thinly sliced red onion
  • ¾ teaspoon salt – ¼ teaspoon pepper
  • ¼ cup apple cider vinegar
  • ¼ cup mayonnaise
  • ¼ cup plain yogurt
  • 1-2 tablespoons honey
  • ½ cup dried cranberries
  • 1 pear
  • ½ cup chopped walnuts
  • lemon wedges

Directions:
  1. Combine the cabbage and carrots in a large bowl and sprinkle with salt and pepper, set aside.
  2. In a small bowl combine vinegar, mayonnaise, yogurt and honey, and whisk until smooth. Add to vegetable mixture along with cranberries and toss to mix well. Cover and chill 2 hours or overnight.
  3. Just before serving, thinly slice or dice the pear and combine with chilled coleslaw. Top with chopped walnuts and enjoy!
