Pear and Walnut Coleslaw

Total time: 20 minutes plus chilling time
Ingredients
- 1 head cabbage, shredded
- 1-2 large carrots, shredded
- ½ cup thinly sliced red onion
- ¾ teaspoon salt – ¼ teaspoon pepper
- ¼ cup apple cider vinegar
- ¼ cup mayonnaise
- ¼ cup plain yogurt
- 1-2 tablespoons honey
- ½ cup dried cranberries
- 1 pear
- ½ cup chopped walnuts
- lemon wedges
- Combine the cabbage and carrots in a large bowl and sprinkle with salt and pepper, set aside.
- In a small bowl combine vinegar, mayonnaise, yogurt and honey, and whisk until smooth. Add to vegetable mixture along with cranberries and toss to mix well. Cover and chill 2 hours or overnight.
- Just before serving, thinly slice or dice the pear and combine with chilled coleslaw. Top with chopped walnuts and enjoy!
