Plum Pie

Picture

Yield: 8 servings

Prep time: 20 minutes

Total time: 1 hr 10 minutes

Ingredients
  • 4 cups sliced fresh plums
  • ½ cup sugar
  • ¼ cup flour
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 unbaked pie shell
  • ½ cup brown sugar
  • ½ cup flour
  • ¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 3 tablespoons cold butter

Directions:
  1. In a bowl, combine the first six ingredients – plums, sugar, flour, salt cinnamon and lemon juice – and mix well. Pour into the unbaked pastry shell.
  2. For the crumb topping, combine brown sugar, flour, cinnamon and nutmeg in a bowl. Cut in butter until the mixture resembles coarse crumbs. Sprinkle evenly over pie filling.
  3. Place finished pie on a baking sheet – this will prevent a mess in your oven if the filling bubbles over the pie. Bake at 375° for 50-60 minutes or until bubbly and golden brown. Check halfway through cooking time and if crust is browning too quickly, cover with foil to prevent burning.
  4. Cool on a wire rack for at least 30 minutes before serving.
  5. Serve with whipped cream or vanilla ice cream
