Plum Pie

Yield: 8 servings
Prep time: 20 minutes
Total time: 1 hr 10 minutes
Ingredients
- 4 cups sliced fresh plums
- ½ cup sugar
- ¼ cup flour
- ¼ teaspoon salt
- ¼ teaspoon cinnamon
- 1 tablespoon lemon juice
- 1 unbaked pie shell
- ½ cup brown sugar
- ½ cup flour
- ¼ teaspoon cinnamon
- ¼ teaspoon nutmeg
- 3 tablespoons cold butter
- In a bowl, combine the first six ingredients – plums, sugar, flour, salt cinnamon and lemon juice – and mix well. Pour into the unbaked pastry shell.
- For the crumb topping, combine brown sugar, flour, cinnamon and nutmeg in a bowl. Cut in butter until the mixture resembles coarse crumbs. Sprinkle evenly over pie filling.
- Place finished pie on a baking sheet – this will prevent a mess in your oven if the filling bubbles over the pie. Bake at 375° for 50-60 minutes or until bubbly and golden brown. Check halfway through cooking time and if crust is browning too quickly, cover with foil to prevent burning.
- Cool on a wire rack for at least 30 minutes before serving.
- Serve with whipped cream or vanilla ice cream
