Sweet Pepper and Kale Pasta

Ingredients:
• 1 (8 oz) package farfalle (bow tie) pasta – or your favorite short cut pasta
• 1 tablespoon Olive Oil
• 1 cup chopped Sweet Peppers
• 1 cup chopped Kale
• 4 cloves chopped Garlic
• ¼ teaspoon dried Basil or Oregano
• ¼ teaspoon crushed Red Pepper flakes (optional)
• Salt and Pepper to taste
• 8 oz Feta Cheese, crumbled
Directions:
1. Bring a large pot of water to a full boil, add salt and cook pasta according to package directions or until al dente, drain.
2. Heat olive oil in a skillet over medium heat. Add sweet peppers, kale and garlic. Season with dried herb of your choice, optional red pepper flakes and salt and pepper to taste. Cook 5
minutes or until vegetables are tender.
3. In a large bowl, toss cooked pasta with vegetable mixture. Sprinkle with feta cheese and serve
