Sweet Potato Salad

Yield:
6-8 servings

Prep Time: 10 minutes

Cooking Time: 10 minutes






Ingredients:
  • 2-3 pounds sweet potatoes
  • 2 ribs celery, chopped
  • ½ red bell pepper, chopped
  • 3 tablespoons bread and butter pickles, diced (or sweet pickle relish)
  • 2/3 cup mayonnaise
  • 1 teaspoon yellow mustard
  • salt and pepper to taste

  1. Peel and cube sweet potatoes. Place in a large pot of cold water, bring to a boil and cook until just tender and not falling apart. Drain in a colander and rinse with cold water. Potatoes can be refrigerated at this point if desired.

  2. In a large bowl combine all remaining ingredients and mix well. Add potatoes and toss gently to coat with dressing. Check for seasoning and add salt and pepper as needed.

  3. Chill and serve.
