Sweet Potato Salad

Yield: 6-8 servings

Ingredients:
- 2-3 pounds sweet potatoes
- 2 ribs celery, chopped
- ½ red bell pepper, chopped
- 3 tablespoons bread and butter pickles, diced (or sweet pickle relish)
- 2/3 cup mayonnaise
- 1 teaspoon yellow mustard
- salt and pepper to taste
- Peel and cube sweet potatoes. Place in a large pot of cold water, bring to a boil and cook until just tender and not falling apart. Drain in a colander and rinse with cold water. Potatoes can be refrigerated at this point if desired.
- In a large bowl combine all remaining ingredients and mix well. Add potatoes and toss gently to coat with dressing. Check for seasoning and add salt and pepper as needed.
- Chill and serve.
