Vegetable Stir Fry

Yield: 6 servings
Prep time: 10 mins
Cook time: 20 mins

Ingredients
  • 1/2 cup orange juice
  • 1/4 cup soy sauce
  • 1 clove fresh garlic, minced
  • 1 teaspoon ground fresh ginger
  • 1 cup broccoli florets
  • 1 cup fresh snow peas
  • 2 carrots, sliced on the diagonal
  • 1 medium red bell pepper, julienned
  • 1 cup sliced fresh mushrooms
  • 2 tablespoons sesame oil
  • 2 tablespoons cornstarch
  • Hot cooked rice
Directions
  1. In a bowl, combine the first four ingredients to make a marinade/sauce; set aside. . In a large skillet or wok, stir-fry vegetables in oil for 2 minutes.
  2. Combine the cornstarch and reserved marinade until smooth; add to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve over rice.

    ** If you prefer to add meat, double the marinade recipe and marinate chicken or beef in it for at least 15 minutes. After the vegetables are sir-fried, remove and keep warm. Then discard the marinade on the meat and stir fry the meat until almost done. Add the vegetables and reserved marinade following step 2 above.
