Ingredients
- 1/2 cup orange juice
- 1/4 cup soy sauce
- 1 clove fresh garlic, minced
- 1 teaspoon ground fresh ginger
- 1 cup broccoli florets
- 1 cup fresh snow peas
- 2 carrots, sliced on the diagonal
- 1 medium red bell pepper, julienned
- 1 cup sliced fresh mushrooms
- 2 tablespoons sesame oil
- 2 tablespoons cornstarch
- Hot cooked rice
- In a bowl, combine the first four ingredients to make a marinade/sauce; set aside. . In a large skillet or wok, stir-fry vegetables in oil for 2 minutes.
- Combine the cornstarch and reserved marinade until smooth; add to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve over rice.
** If you prefer to add meat, double the marinade recipe and marinate chicken or beef in it for at least 15 minutes. After the vegetables are sir-fried, remove and keep warm. Then discard the marinade on the meat and stir fry the meat until almost done. Add the vegetables and reserved marinade following step 2 above.
