Yukon Gold Potato Gratin

Ingredients
- 1 tablespoon butter
- 1 pound Yukon gold potatoes
- 1 cup sharp cheddar cheese
- 2 tablespoons sour cream
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 tablespoon thyme leaves
- ¾ teaspoon salt
- ½ teaspoon pepper
- 1/3 cup chicken broth or white wine
- thyme sprigs to garnish
- Heat oven to 400°. Butter a 9 inch baking dish.
- Slice potatoes 1/8 inch thick and combine in a mixing bowl with ½ cup cheese, the cour cream, olive oil, garlic, thyme leaves, salt and pepper. Mix well.
- Arrange potatoes in neat overlapping layers in the baking dish. Pour over wine or broth.
- Bake 35 minutes, until potatoes are nearly tender and starting to brown. Top with remaining cheese and bake another 10-15 minutes.
- Garnish with thyme sprigs.
