Yukon Gold Potato Gratin

Yield:
4-6 servings

Cooking time: 50 minutes




Ingredients
  • 1 tablespoon butter
  • 1 pound Yukon gold potatoes
  • 1 cup sharp cheddar cheese
  • 2 tablespoons sour cream
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon thyme leaves
  • ¾ teaspoon salt
  • ½ teaspoon pepper
  • 1/3 cup chicken broth or white wine
  • thyme sprigs to garnish

Directions:
  1. Heat oven to 400°. Butter a 9 inch baking dish.

  2. Slice potatoes 1/8 inch thick and combine in a mixing bowl with ½ cup cheese, the cour cream, olive oil, garlic, thyme leaves, salt and pepper. Mix well.

  3. Arrange potatoes in neat overlapping layers in the baking dish. Pour over wine or broth.

  4. Bake 35 minutes, until potatoes are nearly tender and starting to brown. Top with remaining cheese and bake another 10-15 minutes.

  5. Garnish with thyme sprigs.
